Here are some general guidelines for cooking a whole-skinned alligator.
Start with:
Alligator is a lean meat so you want to make sure you are keeping it moist.
Brine or marinate the alligator overnight.
Season the alligator any seasoning can be used (we have several to choose from on our site). You can coat the alligator with butter or a basting spray to help the seasoning set. (Wrapping the alligator in bacon is an option bacon fat helps keep it moist while cooking)
Preheat your grill to medium-high heat (250-275 degrees) and lightly oil the grates.
Place the alligator on the grill and cook for about 2-4 hours, or until the meat is cooked through and lightly charred. (Cooking time will depend on the type of grill you are using and the size of the alligator.
To ensure that the alligator is cooked evenly, use a meat thermometer to check the internal temperature of the meat. The alligator is done when the internal temperature reaches 165 degrees Fahrenheit.

Small whole alligator
We bought a Pitt boss, smoked Our first alligator, it was an absolute hit! We trimmed off every little bit of fat after splitting the tail, soaked it in brine for over 24 hours. Stuffed and seasoned, smoked low and slow, we had neighbors walking over cause the smell was so incredibly delicious. We had so much fun we ordered a 2nd gator! Highly recommended! Not one bit of a fishy taste.! Absolutely Devine

Was extremely nervous about ordering this whole gator, it was worth it. I ordered medium gator that arrived quickly package just as it was explained . I would order larger or bigger, the medium is smaller than expected. Will be doing this gain, thanks creole for being true to your customers.

The alligator we purchased from Creole Food was a huge hit for our Mother’s Day cookout! We live in central WI so it’s something we’ve never tried. Everyone loved it…even the kids! The ordering process was easy, delivery was exactly as stated and the packaging was secure and sturdy. It was still frozen when it arrived and only took a day to thaw. We put ours in a brine overnight, seasoned, wrapped it in bacon and tossed it on the smoker…it was a flaky and had great flavor. We wouldn’t hesitate to order again and will recommend this company to anyone. Can’t wait to try out some of the other things they offer!!

Alligator was excellent. It came fast and was well intact. Solid frozen, Staff was very helpful and people friendly. I am very satisfied my family was very pleased we cooked it on a spit over a fire it was awesome I recommend this company to anyone. Thank you creole food company.

The gator was great! Brined it overnight in shrimp boil and oranges, rubbed with some cajun season, smoked over pecan at 275F for about 4.5 hours until it was 165F internal, glazed with some sweet and tangy bbq sauce, and it was perfect! Huge hit!
