Here are some general guidelines for cooking a whole-skinned alligator.
Start with:
Alligator is a lean meat so you want to make sure you are keeping it moist.
Brine or marinate the alligator overnight.
Season the alligator any seasoning can be used (we have several to choose from on our site). You can coat the alligator with butter or a basting spray to help the seasoning set. (Wrapping the alligator in bacon is an option bacon fat helps keep it moist while cooking)
Preheat your grill to medium-high heat (250-275 degrees) and lightly oil the grates.
Place the alligator on the grill and cook for about 2-4 hours, or until the meat is cooked through and lightly charred. (Cooking time will depend on the type of grill you are using and the size of the alligator.

I used the Ragin Cajun Chicken or Gator seasoning as a dry rub and oven roasted for two hours on 250° then finished on the grill for a cookout, and all of it was eaten! The picky eaters in the group even tried some & came back for seconds, it was the highlight of the afternoon.

Great staff, answered a lot a questions as I'd never smoked a gator before
Great staff, answered a lot a questions as I'd never smoked a gator before. You know its a show stopper when you pull it out of the smoker and everyone grabs their phones to take pictures. Tasted like cajun spiced chicken and was absolutely wonderful! Brine it, rub it, smoke it, hit it with clarified butter a couple times while smoking. If you've thought about doing it there's no reason to hesitate or be intimidated. Small gator will fit in most smokers when curled up.
