Bold Cajun Seafood Gumbo: Dive into Louisiana's Coastal Treasure

Ingredients
For the Roux:
- ½ cup vegetable oil
- ½ cup flour
For the Gumbo:
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 pound andouille sausage, sliced (Savoies Andouille 16oz)
- 6 cups seafood stock
- 2 cups chicken broth
- 1 can stewed tomatoes
- 2 bay leaves
- 1 tablespoon Big Chief Creole Seasoning 8oz – Vibrant blend with paprika and citrus
- 1 teaspoon Ragin’ Cajun Chicken and Gator Seasoning 8oz – Zesty garlic and lemon notes
- 1 teaspoon thyme
- 2 tablespoons Worcestershire sauce (Crystal Worcestershire Sauce 10oz)
- 2 cups okra, sliced
- 1 teaspoon Cajun’s Choice Gumbo File 1.4oz – Earthy thickener
For the Seafood:
- 1 pound shrimp
- 1 pound crab meat
- 1 pound white fish
- ½ pound oysters
For Serving:
- Cooked rice (Cajun Country Long Grain Rice 5lb)
- Parsley
- Hot sauce (Louisiana Fish Fry Cravin Cajun Hot Sauce 6oz)
Instructions
Step 1: Make the Roux
- Heat oil, whisk in flour, stir 20-30 minutes to dark brown.
Step 2: Add Veggies and Sausage
- Sauté holy trinity and garlic 5-8 minutes.
- Add sausage, cook 5 minutes.
Step 3: Build Broth
- Add tomatoes, stock, broth, seasonings, thyme, Worcestershire.
- Boil, then simmer 1 hour.
Step 4: Thicken
- Add okra and file, cook 10 minutes.
Step 5: Add Seafood
- Stir in seafood, simmer 3-5 minutes.
Step 6: Serve
- Ladle over rice, garnish with parsley and hot sauce.
