It is a lighter take on traditional pork andouille while still bringing the smoky, seasoned flavor needed for gumbo, pastas, soups, grilling, and Cajun meals that deserve better than bland little sausage sadness.

Use this smoked chicken andouille in chicken and sausage gumbo, jambalaya, red beans and rice, soups, stews, beans, pasta dishes, breakfast skillets, grilled sausage plates, and one-pot meals. Fry, grill, bake, or boil until the sausage reaches an internal temperature of 160°F, then let it rest for a few minutes before serving.
