Here are some general guidelines for cooking a whole-skinned alligator.

Start with:

  • Alligator is a lean meat so you want to make sure you are keeping it moist.

  • Brine or marinate the alligator overnight.

  • Season the alligator any seasoning can be used (we have several to choose from on our site). You can coat the alligator with butter or a basting spray to help the seasoning set.  (Wrapping the alligator in bacon is an option bacon fat helps keep it moist while cooking)

  • Preheat your grill to medium-high heat (250-275 degrees) and lightly oil the grates.

  • Place the alligator on the grill and cook for about 2-4 hours, or until the meat is cooked through and lightly charred. (Cooking time will depend on the type of grill you are using and the size of the alligator.

  • To ensure that the alligator is cooked evenly, use a meat thermometer to check the internal temperature of the meat. The alligator is done when the internal temperature reaches 165 degrees Fahrenheit.

First time ordering a wholes skinned alligator. The package came in a few days. We brined it overnight and the next day trimmed the fat, grilled it with a rub and spicy bbq sauce. The whole family loved it. Definitely ordering again!!

We did additional fat cap removal in the tail and then seasoned and stuffed the alligator

Posted by Jason on May 26th 2022

We did additional fat cap removal in the tail and then seasoned and stuffed the alligator. Alligator weight was about 22lbs. We grilled/smoked the alligator. The meat was tender with a light smokey flavor. The taste and tenderness was excellent! Our experience with the Creole Pantry company was fantastic. We will shop with them again. The online ordering process was smooth with no issues and top notch friendly customer service when calling for an update on the order. Once shipped it arrived in good time. We paid for the 2 day Fedex shipping. Bag containing the product was torn during the shipping process, the cooler was damaged during shipping spreading foam into the alligator. This was the result of the shipping process not a fault of Creole Pantry. Order processing was slower than anticipated. If you want your item to arrive in time to thaw and allow room for soaking and prep, add additional days to the expected shipping time. Ordered the 13th, shipped the 16th, arrived the 18th.
