Hopefully they will arrive before Memorial Day and I can prepare a Red Bean & Rice FEAST for all of my few friends I have in this area. Remember, don't forget to add the SMOKED SAUSAGE to the bean while they are simmering. Adds so much great flavor.

Below is the recipe I use for red beans and rice
Below is the recipe I use for red beans and rice. I'm sure there are better ones out there but mine is geared towards simplicity. I won't claim to have invented this recipe; I looked at several recipes and took what I thought made sense and didn't add too much time to the meal.2 27oz Cans Blue Runner Original Red Beans1 Yellow Onion (sliced and diced into small pieces)2 Green Bell Peppers (sliced and diced into small pieces)1 12oz Pack of Andouille Sausage (I get Sam's Choice brand @ wally world)1/2 Tablespoon of butterApproximately 1 tablespoon of minced garlic3 Bags of Instant Brown Rice (e.g. I buy the instant brown rice that comes with 4 packs in a box; 1 bag is about 1 cup dry rice)1. Start boiling the water for the rice in a separate pot. Throw in the rice and cook per directions on box once water is boiling.2. Cook/heat up Andouille sausage in a pan with water.3. While the sausage is cooking, slice and dice the yellow onion and 2 green bell peppers. I slice them into very small pieces.4. Once the sausage is finished, slice into slivers or dice. I prefer to slice a link into slivers and then slice the slivers into 4 small cubes.5. Using the pan that the sausage was cooked in (don't forget to remove water) spray with olive oil or equivalent and add in the sliced sausage, yellow onion, and green bell peppers. Cook for a little bit.6. Open the two cans of Blue Runner beans and add to the mixture of sausage, onion, and green bell peppers. Add in about 1-2 tablespoons of minced garlic. Mix very well and simmer for approx five minutes to warm up the beans.7. Add in 1/2 tablespoon of butter and mix well.8. Combine with rice and enjoy.Use white rice to make it taste even better. I use brown rice since it's slightly healthier and with enough bean to rice ratio it still tastes really good. You can double up on the sausage if you want more meat. I started making this recipe with twice the sausage but halved it to save costs and it didn't really take too much away from the flavor. I highly recommend Andouille Sausage if you can purchase it locally as smoked/Italian/etc sausage is not a good substitute imho.Tastes better as leftovers than freshly cooked.---------------------------------Approx cost below not including electricity or gas used for cooking.
