Black beans (also known as Black Turtle Beans, caviar criollo, and frijoles negros) have been a staple in the diets of Central and South Americans for over 7,000 years. We also love them in Louisiana where Blue Runner Premium Select Dry Black Beans are used in Creole and Cajun cuisine. These shiny, satiny, black-skinned beans with white centers are prized for their creamy, slightly sweet flavor.

Ingredients: Black Beans
Soak beans in water overnight. Rinse. Add beans with water to a large pot, and bring to a boil. Reduce to simmer. In a separate skillet brown meat and set aside, reserving fat drippings. In drippings, sauté onion, garlic, and peppers. Add meat, vegetables, and bay leaf to the beans. Add salt, pepper, and cumin seasoning to taste. Cover and simmer, stirring occasionally for about 1 to 1.5 hours, or until tender. Add white vinegar while cooking. Remove the bay leaf. Serve over a bed of steaming rice. Yields 6-8 servings.
